The products can be identified as “On-Demand Product” through tags and/or categories, but I would like a section to be displayed in the checkout process highlighting that it is or is an on-demand product, so it will take a while to arrive, as the product would have to be purchased or manufactured.

Currently, we show product name, price and variant selected in the checkout cart.
I understand your use-case. I have some suggestions.

I suggest you adding that to the product name itself, like - “Tshirt design (On-Demand)”

Even displaying as a text may not be enough. Perhaps you can add a image inside product description using markdown to convey this in the product detail page

The other idea is to add a custom email notification. If someone orders the on demand products, you can do send them an email saying it takes time. This automation can be setup by connecting the Order Sheet to Zapier.
